And by the way, did you know that the Caesar salad originated in Tijuana? During the United States’ Prohibition era, Cesare Cardini, an Italian-born restaurateur working in the country, moved his business just across the border to Mexico so that he could keep serving alcohol. Thirsty Americans poured into Caesar’s; add in the many Mexican customers, and Cardini frequently ran out of food.
In 1924, lacking the ingredients for his usual salad, he improvised a pared-down take with romaine, Parmesan, and all the fixings we know today—except anchovies. So if ever you are admonished for omitting the fish in a Caesar, point your mistaken scold to Tijuana.
